Steam Whistle + Team Cedar Grilling = Barbecue Bliss

The exploding thigh

Arriving at the Steam Whistle Brewery for their Tuesday luncheon, it became quickly apparent to Sharp that it was going to be a great afternoon. There was a beautiful blue sky above our heads, a fully stocked bar and Team Cedar Grilling, the 2006 and 2007 Canadian BBQ Open Champions, were manning the grill.

Sharp got some beers (naturally) then moved on over to where the Cedar Grilling guys were cooking. Two of the Team, Stephen Adams and Daryl Maybanks, were as gracious as they are skilled, showing off their Crown Verity BBQ collection and telling us how they worked their BBQ magic: cooking and steaming their creations for 18 hours or more, and constantly finding the best possible products with which to barbecue.

But talk is just talk. In order to fully appreciate their genius we had to get a taste f ourselves. First on the menu was a bacon-wrapped, cream-cheese stuffed, jalepeno pepper; a delicious blend of both spicy and creamy flavours to whet our appetite for the next meal: chicken thighs in an apricot sauce. Chef Adams guaranteed that it’d be the juiciest chicken we’d ever bite into and he didn’t lie: having been smoked and grilled for multiple hours, the thigh exploded with flavour.

Next up was a tasty beef brisket; then Forty Creek Whisky-infused baked beans, followed by the piece de resistance, fall-off-the bone ribs; the meat tender and benefiting from a special Steam Whistle BBQ sauce. The meal then finished with barbecued pineapple dipped in chocolate. All in all it was a tour de force for the Team Cedar Grilling Team, and by all accounts, they’ll be tough to beat at the 2008 Canadian BBQ Open in Barrie, July 4th-6th.
